Ingredients

  • 4 tablespoons of coconut oil or ghee
  • 1 large onion, finely chopped
  • 2 tablespoons of ground cumin
  • 2 tablespoons of ground coriander
  • 2 ripe tomatoes, diced
  • 1 cup of chopped cauliflower
  • 1 cup of shredded cabbage
  • 1 cup of sliced asparagus
  • 1 cup of sliced mushrooms
  • 1 cup of chopped greens (such as spinach or kale)
  • 2 (14.5-ounce) cans of kidney beans, drained
  • 4 cups of vegetable broth
  • 1 large handful of fresh mint leaves, finely chopped
  • 1 teaspoon of sea salt or kosher salt

Instructions

Step 1

Heat coconut oil or ghee in a large pot over medium heat. Add chopped onions and sauté for 2 to 3 minutes until translucent.

Step 2

Stir in ground cumin and coriander, allowing them to meld with the onions.

Step 3

Add diced tomatoes, cauliflower, cabbage, asparagus, mushrooms, greens, kidney beans, and vegetable broth. Allow to simmer for 15 minutes.

Step 4

Finish by sprinkling chopped mint leaves and salt over the soup. Serve hot and enjoy!

  • Kaphas:

    Swap kidney beans for any other beans or peas to suit dosha needs.
